All I have to say is WOW! This recipe was SO easy to make and the kids just devoured it up!
Creamy Crock-pot Chicken and Broccoli Over Rice
3-4 boneless chicken breasts
1 10oz can cream of chicken soup
1 10 oz can cheddar soup
1 14 oz can chicken broth
½ teaspoon salt
¼ teaspoon garlic salt seasoning
1 10oz can cream of chicken soup

1 cup sour cream
6 cups broccoli florets, just fork tender (I cooked it in boiling water for 3-4 minutes)
1 cup shredded cheddar cheese

1. Place soups, chicken broth, salt, and garlic seasoning into a crock-pot over low heat. Whisk until smooth. Place chicken in, pressing to the bottom. Cover lid and cook on low for 6 hours or on high for 3 hours.
2. When chicken is cooked, use 2 forks to shred into bite size pieces. Stir in sour cream and broccoli.
3. Serve over steamed rice and sprinkle with cheese. 4-6 servings

ReplyDeleteThis was SO delicious! I halved the recipe by just using the cream of chicken (no cream of cheddar) and halving all the other ingredients. I sprinkled crushed ritz crackers on top of the cheese at the end and it was DELICIOUS!! They really added that little extra something. Thank you for the great recipe!

DeleteSo, I ended up adding about 1/2 cup of rice and an extra cup of liquid to the mixture and then allowed it to cook for an extra hour on low. But, nothing happened. I don't know if I should have set the crockpot to high for an hour or what, but my way didn't work. I ended up having to move the whole concoction to a large pot and boiling it to get the rice to cook. I did use Greek yogurt as others have suggested and it turned out really great. Almost like a Chicken Broccoli Rice soup.

DeleteIt turned out really good. You could actually eat it a couple different ways on rice or noodles or you could just add a bit of rice and make it into a soup. It's very filling. The kid's really liked it even Justin and he is a picky eater. I doubled the recipe. I added pepper, garlic salt, minced garlic, Extra Broccoli, 1 can of Broccoli Cheese Soup to the recipe above. Tonight we ate it over Rice but I have enough leftovers to last a few days and try it a few new ways. LOL :)

ReplyDeleteYou can substitute chicken broth for chicken stock - the main difference between the two is that stock is made from simmering the boney parts, giving it a slightly richer flavor / gelatin from the bones.
DeletePersonally, I don't notice much of a difference and always use bullion to make chicken broth for recipes like this.
We loved this! We used cauliflower instead of broccoli and I ended up substituting cream of celery for cream of chicken because I ended up not having any. I froze half for later :)
ReplyDeleteHad this tonight and it was really good. The only changes I made were that I added a can of cream of broccoli soup and I didn't use sour cream. I also used fresh broccoli and I chopped it up put it on a cookie sheet and put evoo,garlic salt and pepper and mixed it up and baked it at 450 degress F for 15-20min. I added it in the crockpot at the end and it was GREAT. I also cooked my rice and added it in the crockpot at the end. Thanks for this wonderful recipe!

DeleteIs there any reason why you would not just cook the broccoli in the crock pot with the chicken? It seems like that would make it that much easier, and one less pot to wash. Now that I think about it, I don't know that I've ever cooked broccoli in a crock pot...maybe it doesn't cook right or something. ???
ReplyDeleteHi Erica! Great question. In my opinion, I cooked it in boiling water for 3-4 minutes prior to adding it in the very last step because you still want your broccoli to be just fork tender. If it is over cooked, it will turn mushy and fall apart. Cooking it on the stove for just 3-4 minutes gives it the perfect touch. If you were to add it to the crockpot, I feel that it would not only have to be timed just right to put in (and I haven't even calculated that part) but then you would have to serve it right away (wouldn't be able to just leave it on warm if you are away because then they broccoli would turn mushy). I hope this helps ;)

This recipe looks delicious and pretty easy to make. I love my slow cooker it makes cooking at home easier. I have reduced my calorie intake by cooking at home and incorporating a diet plan that works with the help of my tracking tools to help me reach my goals. Cooking at a home is so much healthier.

We use two cans of cream of mushroom, one can of chicken broth, and leave out the others. It turns out really good.

ReplyDeleteI made this because it looked easy, and because it looked like my husband's type of meal. I didn't expect to like it myself as much as I did! I found myself eating leftovers for breakfast! The only thing I did differently was add about a teaspoon of fresh garlic in place of the garlic powder and served the broccoli on the side instead of mixed in. Love how good and easy this is and will definitely be making it again, probably many times.
ReplyDeleteI also like that there is room to "healthify" it if you want to use homemade chicken stock, cream of chicken etc., use brown rice, sub greek yogurt for sour cream- BUT if you need to throw something together quickly you can just use the canned stuff, nuke frozen broccoli, even use frozen chicken and minute rice to save more time. Love the flexibility.
I make this recipe once or twice a month. My picky husband, two toddlers and I love it. Great recipe, simple and precise.

I didn't pay enough attention to notice that it was cream of mushroom soup instead of cream of chicken, but the mushroom worked out well :) And instead of doing cheddar soup I attempted to make it gluten free by using milk, GF flour, and cheese so it probably turned out more liquidly than it was supposed to. But my attempt turned out quite tasty, and it's very cost-effective since I got 7 servings out of it. Will definitely make it again. Thanks!

My Mom went to Olive Branch when the coach (or principal) was fired; the students walked out and refused to return until he was rehired. ReplyDeleteJust curious, but if the broccoli is going to cook in the crock pot for 6hr anyways, why do you boil it for 3-4 min prior to throwing it in the crock pot? I wasn't sure if there was a particular reason, or if this would work the same putting fresh broccoli vs frozen in there?
