Instant Pot - Hotdogs

Did you know you can make hotdogs in your Instant Pot? 

All you do is put your hot dogs in your instant pot with 1 cup of water. Close and seal the lid and press “Pressure Cook” or “Manual” and set the time to ZERO. Yes! You read that right! Zero! The hot dogs cook while the Instant Pot is coming to pressure. When it is done cooking, quick release the steam and that is all there is to it.

You can put as many hotdogs in the Instant Pot as you'd like (as long as it's not above the max fill line) and it will only take 1 cup of water. 

Instant Pot - Boxed Mac & Cheese

Did you know that you can make boxed Mac & Cheese in the Instant Pot? It is so super easy.

To make boxed Macaroni & Cheese in your Instant Pot, you put your box of macaroni and 1 1/4 cups of water in the Instant Pot, close it, and turn it on. Cook for 2 minutes on High pressure, let the pressure naturally release for 5 minutes, than quick release the remaining pressure.  Add 1/4 cup milk, 4 tbsp butter and the contents of the cheese packet, stir and you are done.

Want to make 2 boxes? Again, super easy. You will just need to add enough water to cover the macaroni. Same cook time and pressure. Then add 1/2 cup of milk and 1 stick of butter and you are all set.

Crock-Pot Cheesy Chicken & Broccoli Over Rice Recipe

All I have to say is WOW! This recipe was SO easy to make and the kids just devoured it up! 

Creamy Crock-pot Chicken and Broccoli Over Rice

3-4 boneless chicken breasts
1 10oz can cream of chicken soup
1 10 oz can cheddar soup
1 14 oz can chicken broth
½ teaspoon salt
¼ teaspoon garlic salt seasoning

1 cup sour cream
6 cups broccoli florets, just fork tender (I cooked it in boiling water for 3-4 minutes)
1 cup shredded cheddar cheese

1. Place soups, chicken broth, salt, and garlic seasoning into a crock-pot over low heat. Whisk until smooth. Place chicken in, pressing to the bottom. Cover lid and cook on low for 6 hours or on high for 3 hours.

2. When chicken is cooked, use 2 forks to shred into bite size pieces. Stir in sour cream and broccoli.

3. Serve over steamed rice and sprinkle with cheese.  4-6 servings

How Much Did Dinner Cost?

     Pasta is one of my family's most favorite dinners.  We actually make pasta to help remember our late Papa Tony.  There was one thing he wanted to do so bad and that was feed Emily (my 2 year old) pasta.  Since he went to Italy to seek treatment for cancer, accomplishing this was very difficult. He would always tell her, through Skype, that he would hurry home so he can feed her a bowl of pasta! Emily would smile & nod and say, "OK!" Well, he lost his battle in January and never had the chance to feed her pasta.  The boys will tell her all about him and how much they loved his cooking.  If you ask Joey, he will tell you Papa Tony made the best Pizza in the world.  Anthony, on the other hand, will tell you Papa Tony was the best pasta maker! 
     I doubt Papa Tony would believe me if I told him dinner tonight only cost me $0.50! With Giant Eagle doubling, that made my pasta FREE and the sauce $0.50!!    
     So, tonight we will gather around the dinner table and talk about Papa Tony! We will share memories of him like they were yesterday and slurp our pasta in "cheers" to Papa Tony.
